1 red onion, sliced into wedges
2 Tbsp olive oil
2 lbs Boar's Head London Broil Top Round Roast Beef, dinner cut
8 oz Boar's Head Monterey Jack Cheese, sliced thick
Directions
- Preheat broiler on high.
- Toss asparagus and onions in olive oil; spread on a baking sheet. Broil for 5 minutes, then flip vegetables and broil for another five minutes. Repeat until the vegetables are softened and evenly charred, about 20 minutes.
- Once vegetables have cooled to the touch, begin threading on the kebab skewers, alternating with the meat and cheese.
