Lemon-Basil Crusted Salmon Fillets

Ingredients
2 salmon fillets
coarse salt
ground pepper
1 c packed fresh basil leaves, thinly sliced crosswise
1 shallot, thinly sliced crosswise
grated zest of half of a lemon
1/2 Tbsp olive oil
Directions
- Lightly season salmon fillets on both side with salt & pepper. Place in a baking dish, about 1" apart.
- In a small bowl, combine basil, shallot, lemon zest, lemon juice, olive oil, salt and a pinch of pepper.
- Spread basil miture over the salmon fillets. Cover with foil and refrigerate for 20 minutes (to allow flavor to marinate).
- Preheat oven to 325. Bake salmon (covered) until opaque throughout, about 20 minutes.
