Directions

1.      Season both sides of the steaks generously with sea salt and pepper.

2.      Heat oil in a large frying pan or cast iron skillet over high heat until it smokes lightly.

3.      Place steaks in the pan and reduce heat to medium-high.

4.      Add garlic cloves, fresh thyme or rosemary, and unsalted butter.

5.      Cook steaks for 2 minutes, then move them around the pan to brown evenly.

6.      After 5-6 minutes, flip the steaks and cook for another 2-3 minutes.

7.      Remove the steaks from the pan and let them rest for 3-4 minutes.

8.       Slice and serve.
