Spaghetti with Caramelized Brussels Sprouts and Bacon

Ingredients
6 ounces thick cut bacon, cut into 1/2" pieces
1 1/4 lbs brussels sprouts, thinly sliced
kosher salt
freshly ground pepper
3/4 lb spaghetti or bucatini
5 cloves garlic, sliced thinly
1/2 c grated Parmesan, plus more for serving
Directions
- Cook bacon in a large skillet over medium-high heat until browned (8 to 10 minutes). Transfer bacon to a paper towel-lined plate; remove all but 1 tablespoon fat from the skillet.
- Cook pasta in a large pot, about 2 minutes less than package directions. Drain, reserving 1 1/4 c pasta water.
- Add half of the sprouts to the skillet and cook, stirring occasionally, until tender and browned (6-8 minutes). Season with salt and pepper. Transfer to the plate with bacon. Add 1 Tbsp oil and repeat with remaining sprouts.
- Add remaining 2 Tbsp oil and garlic to skillet and cook over low, stirring, until just beginning to brown (2-3 minutes). Add pasta, reserved water, and cheese. Stir to coat, and simmer for 2 minutes.
- Serve immediately, topped with bacon, brussels sprouts, and more cheese.
