Robust Italian Chicken Sausage Fettucine Carbonara

Ingredients
1/2 lb Fettucini
3 Tbsp extra virgin olive oil
1 package Robust Italian All Natural Chicken Sausage, cut in half lengthwise and sliced 1/4" thick
3 large eggs
3/4 c Boar's Head Parmigiano Reggiano, grated
1 Tbsp Fresh parsley, chopped
Directions
- Prepare fettucini according to package directions. Reserve 1/4 c of the pasta cooking water.
- In a large saute pan, heat olive oil over medium heat and saute chicken sausage until browned. Turn off heat and set aside.
- Mix eggs, cheese and parsley in a bowl. Add the chicken sausage, and then pour over the cooked pasta, tossing gently with tongs and using reserved pasta water to thin sauce.
- Return to very low heat for 1-2 minutes, or until slightly thickened.
